Oak, oaky  
Aroma and flavor,  taste quality imparted to a wine that derive from aging in oak casks or barrels.  
Off-dry  
A slightly/too faint  sweet wine.  
Off-flavors  
Describes defective wine, due to improper flavors or odors that are not correct for a particular type of wine.
Oily  
Wine with high glycerin and slightly low acid content describes the vaguely fat. Chardonnays and late harvest sweet wines.  
Open  
Indicates full character.  
Overripe  
Precondition grape that necessary for making certain styles of Californian Zinfandel wines.  
Oxidized
