The appearance of
this classic Burgundy glass perhaps promises more than it delivers.
Its wide, open rim
favours vegetal, oaky components and directs the wine in a broad
stream onto the underside and edges of the tongue, where the
acid-sensitive taste buds are sited. This tends to emphasise the
wine’s acidity as well as its pungent, mineral characteristics.
Some would argue that
only very fruity, full-bodied wines with a high alcohol content
(capable of overriding the acidity) are able to achieve true balance
in such a glass, but this is to some extent a matter of personal
taste. Those who prefer rather more bite to their Burgundy will take
great pleasure in drinking from this glass. |
